Balsamic marinated lamb with beetroot ristto and a salad of rocket, walnut and goat's cheese 
Just wanted to try something new. I was pretty happy with the way the beetroot risotto worked out. Aesthetically it looks pretty exciting and also tasted ok.
Fish and Chips a la Dianna This is the fish and chips I made for Lauren, Ian and Kelly when I was in Sydney. Unfortunately the snapper was very bad quality. However, Kelly still said that she would pay $36 for it in a restaurant so I'm pretty happy with that effort!! To cook the fish I used James' method of frying some butter, lemon juice, lemon rind and dill and then adding the fish fillets. The chips were made by slicing potatoes into wedges and then tossing them with rosemary, garlic, olive oil, salt and pepper. For the salad, I simply tossed together some baby spinach, marinated baby boccocini, marinated artichoke and home-made oven roasted cherry tomatoes.
